Pan Fried Tilapia with Egg Sauce

Ingredients:
4 pcs. tilapia (St. Peter's fish)
1 tsp. each fine salt, pepper & liquid seasoning
1 cup cornstarch
1 cup Magnolia Nutri-Oil
For the sauce:
1 cup sandwich spread
|
4 pcs. hardcooked eggs, peeled & finely chopped
pinch of salt & pepper
For the garnish:
4 salad tomatoes, sliced
lettuce leaves

Directions:
Clean and scale fish; score 3 slits on each side and season with salt, pepper and liquid seasoning.
Dredge in cornstarch.
Heat cooking oil in a 12" -flat frying pan.
Fry fish until golden brown on both sides.
Drain on Tork paper napkins.
To make sauce: mix together in a bowl the sandwich spread, eggs and season with salt and pepper.
Arrange fish on a serving platter; garnish with slices of salad tomatoes and lettuce leaves.
Serve with sauce on the side.
